Making a menu with 200 items is inefficient. A menu of any format with a huge list of dishes is hard for the waiter to work with, and the client gets tired of choosing dishes. That's why it's more convenient to produce additional menus — moreover, not every client wants to see the entire assortment right away; it's better for the waiter to ask whether to bring the bar menu, the Japanese menu, etc.
Sometimes additional menus (for example, a Japanese menu, cocktail list, or dessert menu) are quite extensive in content and look like a full-fledged menu. But most often additional menus have few pages and look like a small booklet or an A3, A4, or A5 sheet folded once or more, or of an arbitrary size. A shot drinks menu, for example, usually lies on the bar and looks like an A3 sheet with thick lamination. Seasonal menus are produced for a short period, for example — lean/fasting, New Year, or pancake (Maslenitsa) menus.
Paper of varying density is used depending on the situation, but most often it's the densest coated cardboard, 350 g/m². It's laminated with film of varying thickness, which protects the menu and extends its usage period.
Of course, designer cardstocks can also be used — such menus look more expensive and refined; in this case lamination isn't used as protection since it would cover up the beauty of the cardstock, but such a menu is much less durable.
